What the Food Critics are Saying

“The Bazaar, from Spanish chef José Andrés, is many things. At the Rojo & Blanca tapas bar, the menu comes in two parts: traditional and modern. The genius lies in the ability to mix and match. Ingredients are the highest quality, and every bite is a revelation, plus the place is giddy fun. Try the escalivada, codfish fritters and braised rabbit from the traditional side; "Philly cheesesteak," sautéed cauliflower "couscous" and tomato heart and watermelon from the modern menu. Or just take a seat at the bar and indulge in the finest hand-cut jamón on the planet from acorn-fed, free-range black-footed pigs.” – LA Times

“As ambitious and sprawling and even phantasmagorical as the Bazaar by José Andrés is, it can be summed up in one dish…I’m talking about olives. Then again, I’m not. The way Mr. Andrés serves them…they’re more than that: a glimmer of new wave gastronomy, a glance backward toward culinary tradition and a commentary on what links the two. They’re the restaurant in miniature. Order them and a few come in a tin, pierced by toothpicks and stuffed with anchovy and piquillo pepper, as they might have been ages ago. The others come one apiece on curved white spoons, and they’re actually translucent balls of liquefied olive, held together by the thinnest of membranes and the miracle of modern kitchen science… And therein lies the distinction of this bold project, which does something new with avant-garde food by fully integrating it into a broader, more straightforward menu.” – New York Times

Created by world-renowned designer Philippe Starck, the Spanish piazza setting features distinct and eclectic styles for each dining venue. Blanca, the contemporary tapas bar, is lounge-y with white couches and oversized tables. Rojo, offering more traditional tapas, is darker, with red accents and a view of the kitchen. Bar Centro is dimly-lit with sofas and tall communal tables, and the fanciful Patisserie delights with a myriad of exquisite bonbons under glass cloches.
