Shibumi serves refined Japanese fare at a 400-year-old cypress wood counter in an elegant, 40-seat, kappo-style space in DTLA. The open kitchen uses local, and (whenever possible) organic and sustainable ingredients, in changing dishes like grilled pork in koji rice, crispy monkfish with mixed citrus salad or sea bream sashimi accented by pickled plum. The curated beverage menu includes sake and shochu selections, French and Californian wines, craft beers and ciders.
